Chicken Fajitas

I made Chicken Fajitas twice last week – for friends who came home for dinner during the week and for Mahesh on the weekend. I followed Nigellas stir-fry style recipe for this. Again unbelievably simple and tasty 🙂

Ingredients

Chicken breasts 500 gms cut into thin strips

Lots of oregano

1 tsp cumin powder

2 tsps finely chopped  garlic (Nigella’s recipe called for 30ml garlic oil)

2 onions thinly sliced

1 red pepper sliced into thin long strips

1 yellow pepper sliced into thin long strips

2 tbsps lime juice

Salt, pepper, and sugar

Tortillas

Tahini sauce (my addition)

Marinate the chicken with the garlic, oregano, lime juice, cumin powder, salt, pepper and sugar. You could also add some chilli flakes.  Heat oil and add the chicken. It should take about 6-8 minutes to cook completely.

Tossed Chicken

Set aside and add the onions and capsicum and lightly toss them.  The cooking is done. Now begins the assembly job.

Bell Peppers and Onion

Warm the tortilla and then spread the tahini sauce and then place the chicken, onion and bell peppers. Add some tabasco and tomato sauce if you like.  And then eat!

Tortillas/Pita bread can be bought from Green Chick (Green Chick Zindabad!) Since green chick had  run out of tortillas I stuffed the chicken into pita bread for Mahesh. He did not complain 🙂

Stuffed Pita

TAHINI SAUCE

3-4 tbsps of sesame seeds

3 cloves of garlic

salt

parsley

2 tsps lime juice

pepper

1 tbsp olive oil

water

Grind everything together into a smooth paste and tahini sauce is ready!
