I am consciously trying to cut down on calories 🙂 I made this palak raita for dinner one night. Simple, light and a meal by itself, I had to guard it to prevent Mahesh from finishing it.
Here is the recipe:
1 bundle of palak (blanch it for 10 minutes)
1 finely chopped onion
1 tsp finely chopped ginger
1 finely chopped green chilly
1 cup curd
1 tsp jeera
Salt, Jeera powder, ginger powder (optional), and amchur (optional) as per taste.
After blanching the palak leaves, chop them finely. Heat add 1/2 tsp oil and add the jeera, onions and chilly. After the onions cook, add ginger and the palak and all the dry masalas.
Once this had cooked and the liquid has evaporated, let it cool. Add the curd next.
I got excited and added some peanuts as well. Doesn’t it resemble a brownie with vanilla ice-cream and nuts or is my dieter’s imagination running wild 🙂
