Mahesh’s Country Style Chicken Curry

So, the country boy decided to cook last Sunday. Lots of cookbooks were referred to. I make a request for a spicy South Indian style chicken curry. He finally zeroed in on the Chicken with Thick Gravy recipe from The Suriani  Kitchen by Lathika George (gifted to us by Deepa & Tony). The recipe did not call for coconut paste. I insisted that it be added.  He departed a bit from the recipe. This is how Mahesh made it:

8pcs of cut chicken

2 onions thinly sliced

2 tsps of ginger-garlic paste

2 tbsps of a paste containing grated coconut, cardamom, cinnamon, cloves, star anise, chilli powder, coriander powder, pepper powder and turmeric.

Curry leaves

1 tsp Vinegar

Mustard seeds

He fried the onions and then added the ginger-garlic paste. After this, he added the coconut paste, the chicken, 1tsp of vinegar and 2 cups of water. He let this cook for over 30 minutes.  He then tempered it with mustard seeds and curry leaves.  It was super duper yummy to say the least 🙂 The husband should cook more often!
