Roast Chicken with Peanut Butter

I make roast chicken without any oil at least once a week. I keep experimenting with the marinade. This time around, I decided to use my chicken satay marinade and it worked wonders!


4 pieces of chicken leg and thigh

For the marinade

1 tbsp peanut butter (I used Skippy crunchy PB)

8-10 cloves of garlic

4 kaffir lime leaves (you could substitute with lime zest)

Juice of half a lemon

1 tbsp soya sauce

2 tbsps sweet chilli sauce

1 green chilli


Grind all the ingredients for the marinade. Make slits on the chicken and rub the marinade in. This recipe does not require any salt or oil. The peanut butter, soya sauce and sweet chilli sauce have enough salt and the peanut butter and the chicken ooze enough oil to cook the meat. Let it sit for an hour and then roast at 250 degrees for 15 minutes and then turn the pieces over and roast for another 15 minutes. The result is a very juicy piece of chicken! You could serve this with some herb potatoes.

      Actually, I made this in the microwawe using convection mode. I used to have a HUGE thing against cooking in the micro. I am over it now.
