Tortilla Pizzas

For almost a year, the wall clock has been running fast by five minutes. Yesterday, it stopped working. I changed the battery and then checked the time online and tuned it accordingly. In the past year, we had adjusted our schedule (especially, the TV schedule) around the clock. I would always switch on the TV when the clock showed 9.05pm. I did the same last night only to realise that I had actually missed the first five minutes. I was surprised by the thought that the husband and I adjusted to it instead of simply walking up and correcting it. I brought it up with him. He immediately pointed to several other things in the house that were lying around instead of being kept in a designated place. We noticed these almost everyday. Instead of lifting the steamer, we walk around it to reach the bathroom. We consoled ourselves by saying that we are not thaaaat lazy and manage to ensure that essentials are taken care of.

I had friends over recently. I had some tortillas at home. I guess this is my ingredient of the year. There are so many things you can do with them. I’ve made fajitas and mughlai parathas with them. I wondered if I could make a super crispy pizza with tortillas. No harm trying. The results were very good.

Ingredients

For the tomato sauce

1/2 cup tomato puree

2 tbsp tomato sauce

1 tbsp chopped garlic

1 tsp oregano

Dash of vinegar

Pinch of Salt

Ingredients for the Pizza

3 Tortillas

1 onion cut into chunks

1 tbsp of sweet corn kernels

5 mushrooms thickly sliced

Chicken ham (optional)

Mozarella cheese

Fresh Basil leaves

Process

1. Heat 1 tsp of oil and add garlic to it. Fry for a minute and then add the remaining ingredients for the sauce and cook for two minutes and then take off the flame.

2. Layer the sauce on the tortilla. Grate some mozarella on to it. Then arrange the toppings and grate some cheese on top also. Don’t load the base with too much as it will be difficult to eat later.

3. Line a dish with butter paper and place the tortilla on it. Bake on convection mode at 220 degrees for 10-12 minutes.

4. Remove and garnish with fresh basil leaves.
