Chicken Satay with Peanut Sauce

This is one of the very first things I made when I started experimenting big time in the kitchen. After scanning through several recipes, I’ve added some of my own touches and can say that this is my version of a satay and peanut sauce. This is a simple dish and takes very little time to make and can be served as a starter. It takes very little oil as well.

Ingredients for Chicken Satay

500 gms chicken breast cut into thin long strips (You could try this with paneer, lamb or fish as well. Cooking time will vary though)

7-8 cloves of garlic

2 kaffir lime leaves

1 stalk of lemon grass

Juice of 1 lemon

1 bird’s eye chili or 2 green chilies

1 tbsp peanut butter

1-2 tbsp dark soya sauce

1 tbsp sweet chilli sauce

1 tsp oil

Salt to taste

Marinated Chicken and Satay Sticks


1. Blitz all the ingredients (other than the chicken, of course!) listed above and apply to the chicken. Taste to check if it needs salt before adding some because the soya, sweet chilli sauce, and peanut butter can make it quite salty. Let it sit for at least an hour. The longer the better.

2. Soak the satay sticks in water for an hour or so. This is necessary as otherwise the stick may burn when it hits the pan.

3. Skewer the chicken on to the sticks.

4. Add 1 tsp oil to a non-stick pan and make sure it coats the pan. Once it heats up, place the sticks on the pan and let it cook . Keep turning it to ensure that both sides are cooked. As the chicken strips are thinly sliced they will cook quickly. It should take a max of 10 minutes for it to be fully cooked.

Ingredients for Peanut Sauce

My family and friends love this peanut sauce. There have been times I’ve made the satay just so that we could savour this sauce.

1 finely chopped onion

1 tbsp minced garlic

1 tbsp peanut butter

1 diced bird’s eye chili/green chilly

1 tsp dark soya sauce

1 tsp sweet chilli sauce

1/2 cup coconut milk

Warm water

1 tsp oil

Dash of vinegar

Ingredients for the Peanut Sauce


1. Heat the oil. Add onion and garlic and cook till it turns light brown.

2. Add the peanut butter, soya sauce, and sweet chilli sauce. Also add the bird’s eye chili.

3. Add the coconut milk and turn the heat down. Add warm water to reach the desired consistency of the sauce. Add a dash of vinegar at the end. Taste and add whatever you feel is missing.
